Kale, Sausage, and Tortellini Soup

You can use kale, spinach, or swiss chard in this soup, and it’ll turn out deliciously! Don’t be afraid of the greens, because they add a pretty and tasty element to this already delicious concoction, without giving a strong flavor of greens. This is one of my all time FAVORITE soups to make!


Kale, Sausage and Tortellini Soup

Servings 4 servings


  • 1 lb italian sausage
  • 1 tbsp olive oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 4 cups beef or veggie broth
  • 1 20-oz. can of diced tomatoes
  • 1 tbsp italian seasoning dried
  • 2 cups kale packed, chopped
  • 1 9-oz. package of refrigerated tortellini
  • salt and pepper to taste
  • shredded parmesan cheese as garnish


  1. Heat olive oil in a large pot and add in sausage. Crumble and cooked thoroughly.

  2. Drain sausage, if desired, and return to pot. Add in onion and garlic and sauté for a few minutes.

  3. Add in broth, tomatoes, Italian seasoning, salt, and pepper. Bring to a light boil. Let simmer for 5-10 minutes, until onions are tender.

  4. Add in kale and tortellini, and cook for 7-9 minutes longer, until tortellini is tender.

  5. Serve warm with parmesan cheese. If soup is too thick, add a little water to thin out.
