Sweet Potato au Gratin


  • 2 large sweet potatoes peeled
  • 1 large egg
  • 2 cups heavy whipping cream
  • 3/4 tsp salt
  • 1/8 tsp nutmeg
  • pinch of pepper
  • 3 tbsp grated Parmesan cheese
  • fresh thyme, minced optional


  1. Preheat oven to 375F.

  2. Slice potatoes into 1/4 inch thick slices.

  3. Place potatoes in a greased 8-in. square baking dish. 

  4. In a bowl, beat the egg. Add in the cream, salt, nutmeg and pepper and mix well.

  5. Pour mixture over the potatoes. Sprinkle with cheese.

  6. Bake, uncovered, for 40-45 minutes or until the potatoes are tender. Serve warm with additional cheese or fresh thyme sprinkled on top.
